A biryani is made by gently cooking with special flavour basmati rice, together with a mixture of mild spices. Served with a special vegetable curry sauce
Plain Curry Dishes
Related to the Madras, but involving a greater use of garlic, tomato, lemon, ginger & black pepper. It owes its name & in parts its content to the early Portuguese settlers
Malayan Special Curry Dishes
A preparation of mild spices in which cream or milk is used to create the delicacy of flavor & creamy texture
Dansak is prepared with oriental spices, pineapple, lentils & lemon juice to add sweetness & a sharp sour flavour
A combination of a special blend of spices fried together to provide a dish of medium strength & rather dry consistency compared with curry
A method of preparation similar to bhuna where onions are mixed with spices & fried briskly
Tender pieces of chicken breast marinated & barbecued in tandoor & cooked with a pinch of sugar, cream & spinach. This dish is a distinct colour, hence the name hariyali (green)
Rogan is prepared with oriental spices to make a delicately flavoured sauce with a tinge of ginger & lots of tomatoes
Here the characteristic of the dish is derived from the use of tomatoes with a mixture of spices
